Horticulture - Summer Harvest 2011
"This year's bountiful harvest was due to the hard work of our students." said Mike Gerrity who teaches Horticulture here at Ocean Tides. The fruits of their labors are turned into delicious soups, salads, and stews by Chef Andy Lussier the director of Culinary Arts and his crew. See one of Chef Andy's recipes below.



Chef Andy's recipe for Beer Battered Eggplant
Ingredients
1 Eggplant sliced 1/2" peeled
1 Cup A.P. flour
1 Teaspoon paprika
12oz. Beer
Oil as needed, 1/4" deep in pan.
Salt as needed.
Method
1. Mix beer, paprika, and salt until smooth.
2. Heat oil to 350 degrees.
3. Dip eggplant into batter, place in oil, fry until golden.
4. Optional - Top with your favorite tomato sauce
& mozzarella cheese, bake until melted.
